This tutorial shows building 2D occupancy grid map using kinect and turtlebot as robot base. If ur looking for 3d maps then look for RGBD slam using kinect.

Yes, many packages attempt to do that. You can try using package search at ros.org to find one that suits you. For instance, you could try searching for rgbd or map.
