Setting camera image publisher for 100 Mbit/s transfer

I've a camera connected through Ethernet and publishing images in a topic. The issue is I'm limited to 100 Mb/s of data.

How can I set my camera settings (image size, FPS..) to be able to see the video in live without latency?

I've updated your title to correct the MB vs Mbit. That is a rather big difference.
