Running Rviz on ROS1 Docker on MacOS

I am trying to run Rviz on Docker on a MacOS system but I am running into some issues. I have been able to run ROS1 successfully in a Docker container and even got GUI applications to work. However, Rviz has not worked and I have been trying a couple of different tutorials (mainly this one) to try and create a new Docker container specifically for Rviz but I still come across issues. Specifically for that tutorial, when I run the rviz docker, I get errors like "unknown shorthand flag" or "failed to create shim" none of which I have really been able to find a solution to online. Has anyone been able to get Rviz working on ROS Docker and would be able to give me any guidance as to how to run this?
