Apart from macOS no longer being a Tier 1 supported OS, I don't believe anything has really changed since #q364340.
In essence: building from source should still be possible.
It is better to work on. a virtual machine as Big Sur is not supported for ROS.
As M1 is Arm64 based, you can install ROS1 Noetic or ROS2 on Ubuntu 20.04 using parallels.
