how to convert rgb image into binary image

Sorry but Im really new to ros and image processing. Im using uvc_camera to get image stream from web-cam and using rqt_image_view to view the image. Currently the image is in color. What can i do to convert the image into black and white. I want all color except white become black. And also how to create another window to show the binary image in rqt_image_view, because currently the color image is open via image_raw.
