I'm not entirely clear on what you're after, so correct me if I miss your point. It sounds like you want to change the view in RViz, which can be done in the "Views" panel on the right. The RViz documentation provides more information on the different built-in options. You can also make your own view and save it. Here's a view I made by starting with the default "FrameAligned (rviz)" view and adding -90 deg (-1.57 rad) of roll:

So, for example, grid plane is "horizontal" and the z-axis is right (or left, no matter) instead of up/down.
Is this what you mean? Note the grid's plane is now YZ (left panel).
