Perhaps useing Moveit! to control a robot arm for a pick and place application, maybe look around at some factories and see what kind of processes can be made autonomous, or maybe just make a custom robot arm and use Moveit! to control the robot arm. Robot arms are always cool. Better yet, maybe attach a robot arm to a mobile robot and have the robot detect some sort of object (apples, oranges, round things, etc.), approach the object, and pick it up with the robot arm (all autonomously of course).
