I've had some problems with the openni_kinect driver not publishing any image messages, and there seem to be others experiencing this problem, too. There's a bug ticket here and another thread dealing more specifically with this issue here. Hopefully they'll fix it in fuerte, but in the meantime, you might try restarting the driver until you get some topics published.
