A useful thesis about ROS could be about embedded systems using it, like you said. You can use the beagle board which can be found for $150,00 at digikey. There is a big community interested on it and a lot of material. There is also a ROS package for the Beagle Board so you can use it and project a little but very powerful robot to, for example, education programs, RoboCup and such like that. Even a basic PLC, why not.
