Hi,
I would like to build opencv from source (since some packages don't come with ros installation) and I wanted to know how to exclude opencv during the ros installation phase. Does anyone know anything about that?

Please start by describing how you'd install Melodic without this requirement. The way you normally install ROS matters, as there are different approaches and the one you use determines whether this is possible and how it could be done.
I don't mind to be honest, as long as I get my ros full without the opencv (which I can build myself), I'm fine. However, I don't want ROS to go crazy when I install it after I install my opencv. I've had pretty bad experience with ros "not recognizing installed packages" in the past, so..
